The Blanco Niño story began when founder Phil was running a Mexican restaurant in Dublin.
He loved the flavour and texture of the corn tortillas he had experienced in Mexico’s taquerias, but struggled to find anything in Ireland that truly matched them. Rather than settling for something ordinary, he set out to learn how real corn tortillas were made.
That journey took him through Mexico’s milpas, molinos and tortillerias, where he learned about the traditions, techniques and ingredients behind proper tortilla making. Along the way, he earned the nickname “Blanco Niño”, which later became the name of the brand.
In 2015, Blanco Niño established its tortilleria in Tipperary, bringing together Irish food craft with a deep respect for Mexican culinary heritage.
Made the Traditional Way
What makes Blanco Niño stand out is the way their tortillas and chips are made.
Their process begins with whole corn, which is cooked and steeped overnight using the ancient method of nixtamalisation. This traditional process has been used for thousands of years and is essential to creating proper masa. Once the corn has been prepared, it is ground into dough using Mexican volcanic stones, shaped and baked into tortillas.
For the tortilla chips, those tortillas are left to rest overnight, then hand-cut and lightly fried.
The full process takes three days from start to finish, but that patience is what gives Blanco Niño products their texture, flavour and authenticity. These are not ordinary tortilla chips. They are made from real corn tortillas, carefully prepared and cooked with purpose.
