Handmade in County Cavan, Corleggy is an award-winning Irish farmhouse cheese producer with a deep respect for tradition, local farming and slow, careful cheesemaking. Established in 1985, Corleggy has become one of Ireland’s most respected artisan cheese makers, creating cheeses that are full of character, flavour and craftsmanship.

From a Little Windy Hill in Cavan

The name Corleggy means “Little Windy Hill”, and it is on this hill in Belturbet, County Cavan, that the cheese is made by hand using traditional methods.

Corleggy’s approach is rooted in patience. Their cheeses are made in small batches using milk from neighbouring farms, with a focus on grass-fed cows, goats and sheep. The milk is collected fresh, and the cheese is made with simple, natural ingredients: milk, vegetarian rennet and salt.

There are no shortcuts here. Each cheese is carefully nurtured, matured and looked after as it develops its own natural rind and flavour.

The beauty behind Corleggy Cheese is the perfect climate for the cows, goats and sheep who’s milk create the delicious artisan cheeses. Ireland’s mild climate and regular rain showers make the perfect conditions for raising and feeding these grass-fed animals naturally without the need for anything artificial.
